Every air fryer cooks differently, so keep a close eye on the mushrooms at the end of cook time to avoid burning.
Cooking with dry heat—and yes, cooking directly in fat is actually a "dry" cooking method—allows them to release their natural moisture. It caramelizes their sugars, making them tender, not spongey.
Conventional wisdom about mushrooms dictates that you keep them dry—brush them off instead of soaking or rinsing—and then cook them quickly in a hot pan without crowding. The reasoning is that mushrooms act like tiny sponges and soak up water if you get them wet.
The key to air frying is air circulation. An air fryer works like a small convection oven, with an especially powerful fan that keeps the hot air moving constantly above, below, and around food that's sitting on a grate or rack rather than a flat surface.
Butter is great because it adds lots of flavor and produces a nice golden brown exterior, while adding oil allows the mushrooms to cook a little more quickly at slightly higher heat.
Sautéing the mushrooms after they've steamed and collapsed means that they can't absorb much oil—½ teaspoon is enough to prevent sticking and encourage browning. Vigorously simmering a little butter with chicken broth ensures that the fat emulsifies, creating a flavorful sauce that clings well to the mushrooms.
Oil and butter: For the best and richest flavor, cook the mushrooms in a mixture of olive oil and butter. Mushrooms: A pound of sliced button mushrooms should comfortably serve about four people. Wine: A tablespoon of red cooking wine enhances the flavor of the sautéed mushrooms.
1. Choose the right oil. Oils high in saturated fats are best for frying because they are heat-resistant. Some common oils used for frying include canola oil, vegetable oil, and avocado oil.
The researchers concluded that the best way to cook mushrooms while still preserving their nutritional properties is to grill or microwave them, as the fried and boiled mushrooms showed significantly less antioxidant activity.
Sear mushrooms for a more intense roasted, charred and smoky flavor and overall aroma. Roast mushrooms to get more sweet, salty and umami tastes with caramelized, nutty and buttery flavors. When cooked properly, mushrooms can take on the texture and consistency of meat.
While air fryers are popular, the most expensive models can start to get a little pricey which could undermine their status as a budget item. Many people came out for halogen ovens as the better option. One person said: "I treated myself to a halogen oven to help with Christmas; I only have one shelf in my oven.
How to Cook and Season the Best Air-Fryer Foods With Ease
Chicken Breasts. Everyone has cooked or eaten a rubbery, dried-out chicken breast and there's just nothing about that experience that you want to repeat. ...
"Adding salt before throwing mushrooms in the pan or immediately after will draw out the water from them, making them simmer in their own liquids," says Sofia Norton, RD. This can result in rubbery and tough mushrooms with little flavor.
The Soak. The best way to reconstitute dried mushrooms is to simply soak them in water. Many recipes call for hot or warm water but it isn't always necessary to use hot water.
When overcooked, mushrooms tend to lose their natural moisture and can become dry and rubbery. Plus, they might lose some of their flavor and nutritional benefits. To avoid this, it's best to sauté mushrooms on medium to high heat for just a few minutes until they're golden and tender.
Mushrooms have a high water content, so the key to cooking them until super tender but not water-logged is slowly releasing their water so that it can evaporate as they cook. If you add another liquid like oil or melted butter, it can crowd the pan with too much liquid and it won't all cook off in time.
